Sweet Onion & Raspberry Chipotle Relish
Ingredients:
- 2 large sweet onions
- ½ cup canola oil
- 2 cloves garlic
- 1 cup frozen raspberries
- 1 cinnamon stick
- 2-3 cloves
- ½ cup apple cider vinegar
- ½ cup granulated sugar
- Salt
- Pepper
- 1 small can chipotle peppers
Directions:
- Peel and clean onion and garlic, slice onion and garlic very thin
- Using a small sauce pan, heat oil to medium heat
- Sauté onions for 45 minutes until brown and caramelized (careful not to burn onions), add garlic
- Add frozen raspberries, cinnamon, cloves, vinegar and sugar. Add salt and pepper to taste. Bring to a boil
- Open can of chipotle peppers and add juice only. Be careful, this is spicy!
- Let mixture cook down until thick and rich, cool completely
- Serve relish over a cracker or toasted flat bread with cream cheese
